Eating Your Veggies

Getting in your veggies can be a task in itself. It can be easy to get bored of the same old steamed broccoli. I feel like this is where it’s handy to have a few different ways to prepare those veggies. It’s fun to get creative in the kitchen and mix and match seasonings and try different methods of cooking. The great thing about cooking vs baking is that there doesn’t have to be any exact measurements. You could literally just throw in what you like and more than likely it will come out tasting delicious!

Here are a few ways I like to prep my veggies to prevent the dreaded veggie boredom:

Salads…I know, don’t hate me! Hear me out! You could literally throw in bunch of different vegetables and throw in some delicious dressing and have yourself a meal. My favorite dressing of the moment has been Bolthouse Greek yogurt dressings, but you could do hummus or make your own. Olive oil, lemon juice, sea salt, and pepper is a delicious DIY dressing! Your options are endless…spinach, arugula, romaine, kale with bell peppers, mushrooms, onions, beets, olives, avocado, tomatoes, carrots, and it goes on and on. Add in some chicken, tuna, salmon, or beans for added protein and tah daahh you have had yourself a power lunch!

If salads don’t delight you another option might be to make noodles out of your veggies. This will require a Vegetti or some type of contraption to make veggie noodles, but I would say it’s well worth it. You can take your zucchini, carrots, or sweet potatoes and make noodles out of them. You can then use them as a replacement in your regular noodle dishes. Zucchini spaghetti for example or make an Asian noodle dish with peanut sauce!

Hashes: I learned that you can dice up vegetables quite small and throw them together in a pan with some frozen hash browns (the shredded kind) and it will be delicious! Grate some carrots, dice up zucchini, chop up some mushrooms and sauté it all up with some hash brown potatoes. Season it up! Make some eggs and you’ve got a veggie filled breakfast, lunch, or dinner.

Roasting: This is one of my most favorite ways to consume vegetables. There is something magical about roasting. It heightens the flavor of whatever you’re roasting; it becomes crispy and caramelized. Cauliflower, brussel sprouts, and sweet potatoes are some of my fave! I usually just season with pink sea salt and call it a day, you can use what you have on hand with whatever seasonings you prefer!
