What we’ve been eating…

We have been eating our colors and more whole foods…at least during the week 😁

I wanted to share with you some of our yummy weekday meals starting with this lunch. We used the sweet kale salad kit and baked up some frozen air fryer chicken tenders.

These tenders were from Tyson and they were crispy and delicious. I have to add though that you need some kind of sauce to dip it in because they do run on the dryer side.

I mentioned in my last post the breakfast tacos I have been making with the Siete tortillas.

I roasted up some potatoes for the week to create a quick and delicious breakfast.

The addition of some yummy pickled veggies amped up the flavor!

Watermelon has been a go to snack recently. We get one good watermelon and we are on a roll with finding all the sweet, juicy ones.

For dinner one night we made a stir fry with yuba noodles. Yuba noodles are made from tofu and add a chewy texture and a bit of protein.

We did a combo of shrimp, broccoli, onion and mushroom. It was tasty and filling!

The protein pancakes from Kodiak Cakes and cherries have been another go to breakfast. I love cherries and am so happy it’s cherry season 🙂

These are our eats as of late! What have you been munching on??

Siete Almond Flour Tortillas

I love making subs to more whole foods when given the chance. I had heard about the Siete brand if tortillas from a YouTuber and was very curious.

I am usually skeptical about “healthier” carb alternatives, but I am glad I took the leap to try them out.

They are pricey at almost $8 for 8 tortillas. I found them in my Sprout’s freezer section, but they may be in the refrigerator section of your grocery store.

I put them in my freezer so they last and they thaw out really quickly so it has not been a big deal. I cook them up with a little cooking spray on a non stick pan. They bubble up and become crisp and chewy.

I have been making breakfast burritos with them. They are thin and light but they taste exactly like a flour tortilla to me.

They have tortillas made with other flours like chickpea if that sounds more interesting. I am curious about the chickpea version but I am going to use the almond ones up first.

I am loving these tortillas and the wholesome ingredients. They are great for my weekday meals and super versatile.

Have you guys tried these tortillas? What did you think? Let me know in the comments!

Taco Tuuuuesdayyy

When Cinco de Mayo falls on a Tuesday, you gotta Taco Tuesday! Or at least that’s what my husband said…

I came home from work on Tuesday and he totally surprised me with a full taco set up! We had chicken, pico, guac, salsa, onions, radish, “sour cream” (Greek yog), and of course umm Sriracha to mix it all up 😀

This was so incredibly delicious and we had some leftover priduce that we extended Taco Tuesday in Taco Wednesday. Instead of chicken, we used shrimp seasoned with TJ’s taco seasoning and had the exact same set up. It was so yummy!

Since I still had tortillas leftover, I made myself a breakfast taco with scrambled eggs, sauteed/steamed kale, and obvi Sriracha. I realize I take my food pictures pre-Sriracha so I intentionally made sure the Sriracha was on this time!

I never thought about making legit tacos at home before (I know, silly me!) but after this I am wondering what other delicious concoctions we could come up with…stay tuned!

Did you guys do Taco Tuesday last week? What kind of tacos do you make at home? I would love to hear all the ideas!

Not Breakfast Foods for Breakfast

I feel like at this point in my life I will eat any type of food for any meal. I find myself craving sushi for breakfast sometimes.

Since 2020 has started I have been eating a bunch of random things for breakfast.

Pizza is something I have had for breakfast many times. It feels like a complete meal-carbs, protein, fats. This particular day we had gone out to Huntington and revisited Zero Zero pizza. It was so yummy!

IMG-20200216-WA0026IMG-20200216-WA0027

There was another day I had dumplings and baby carrots. I woke up craving something savory. I had no eggs so I opened the freezer thinking I will just have pancakes, but spotted the frozen potstickers from Trader Joe’s.

I had a few left and they had been in there for a minute. I figured they sound good right now so why not??

20200212_094437

After the gym one morning In n’ Out sounded particularly good. I got a cheeseburger animal style and had my leftover salad. It’s all about balance, right?! 😁

20200214_120349

Now that I have shared some of my odd breakfast decisions, tell me some of yours! Do you crave non-breakfast items in the morning? Let’s talk in the comments! Till next time!

Sunday Funday

I woke up one Sunday not feeling my best, but we got up and got ready to hit the gym.

While having coffee I mentioned how the grey day outside reminded me of a day we went to get Sidecar and how good that sounded…

IMG-20200210-WA0029

Next thing we know we ditched the gym and planned a little 45 minute drive to hit up the closest Sidecar 😁 I mean, do I have the bestest husband ever or is he the bestest husband ever?

IMG-20200210-WA0032

When we arrived there was a line, but it moved quickly and pretty soon we were in and smelling the goodness.

We decided to get six donuts: the blueberry champagne, Saigon cinnamon, butter and salt, butterscotch crunch, a glazed yeast, and a birthday cake.

IMG-20200210-WA0045IMG-20200210-WA0060IMG-20200210-WA0064

As much as we wanted to dive face first into these bad boys we had a little self control and made a stop at Shirley’s to get a bagel.

IMG-20200210-WA0044

We had never heard of Shirley’s but there was a line so we figured it’s probably pretty good. We ordered an everything bagel with cream cheese.

If I am being completely honest this was totally okay. Nothing magical about it, but the blueberry champagne doughnut we had after…holy moly deliciousness.

It was soft and sweet and creamy! I loved it so much!

We found this cool little mall and did some walking around before heading back home.

We dropped by Sprout’s and had to try the Terra sweet potato chips Hunida had mentioned and totally loved them. They were crunchy and perfectly salty, a great Sunday snack!

We had initially planned on having pizza for dinner but with the grey weather and me feeling under the weather we decided on pho!

IMG-20200210-WA0066

We got the rare beef and it was really good and so flavorful! I definitely did not finish mine but made a valiant effort.

IMG-20200210-WA0070

Dessert was our Sidecar doughnuts and I can’t began to tell you how good their doughnuts are. My favorites were the blueberry champagne, glazed yeast, butter and salt and the birthday cake.

So basically all of them…😂

Our dinner was basically a linner of sorts so we had some more dessert in the form of a fruit platter.

We had never had star fruit and decided to try it out. The one we had was crunchy like an apple but didn’t have much flavor.

IMG-20200210-WA0058

That concludes our full day of eating on this fun Sunday!

What’s your favorite way to doctor up pho? I love all of the things and a good amount of sriracha.

Let’s chat pho and doughnuts in the comments below 😊

Random eats and a fruit haul

I really enjoy doing a recap of our meals because it takes me back to those days and gives me all the mems.

Like this turkey and hummus pita with shrettuce and pickles. I remember being so hungry and eating quite a few carrots while making this.

20200129_141910

We visited Mendocino for lunch one day and shared a couple of sandwiches with these amazing spicy chips.

IMG-20200126-WA0016IMG-20200126-WA0015

Once a week salmon saga continues with baked salmon and roasted carrots…

IMG-20200202-WA0014

My favorite thing at Denny’s used to be the Fit Fare Sizzlin’ Egg Skillet, but it is now this veggie omelet. I got it without cheese and a side of steamed brocc.

20200131_112453

The hashbrowns that it came with were so crispy and went perfectly with the soft eggs. Side of turkey bacon…all of the proteins!

One particular night we had a little bit of leftover ground beef so we made burgers and had chips on the side.

IMG-20200126-WA0011

I was super proud of us this night because we used up our last two potato buns and leftover shrettuce. It is so satisfying to use things up!

I don’t know if it could be considered a fruit “haul” but we have been eating a lot of fruit lately.

It started from a walk to our Farmer’s Market where we got three pints of strawberries and some mandarins.

IMG-20200202-WA0031

I don’t think it’s berry season, but these were the most yummy strawberries. The mandarins were juicy and sweet. Omg I could have just eaten pints and pints of those strawberries!

We visited Sprout’s and found these golden kiwis. I had been wanting to try them and I am so glad we did! These kiwis were so sweet and as promised golden on the inside. Love, love, love!

Mangoes were another fruit that I was certain would not be good right now, but ended up being delectable. It was so sweet and reminded me why I don’t need any other dessert when I have a good mango.

IMG-20200202-WA0022

Do you guys feel this way about fruit? If the fruit is good enough and sweet enough I don’t need anything else to curb my sweet tooth.

Thanks for reading friends! See you next time!

Some stuff I forgot to mention…

Before Christmas and our trips we were trying to not waste food so we were using up what we had left and we chose to eat out after that so we had some really yummy food that I never had a chance to share with you guys. Besides that B took a lot of these pics and they were so good I couldn’t help but share!

Starting off on a sweet note we had Baked for dessert one night…I’m not sure how good it is that we live so close to one. It’s seriously so freakin’ good. I really want one right now!

IMG-20191208-WA0017

Speaking of Baked, you know what else is good from there? Their cheesecakes. This one in particular is the yema creme brulee one and it was one of the best cheesecake/dessert items I have ever had. Since then we’ve tried the ube and it’s also incredible, but I would say go for the yema first!

IMG-20191208-WA0018

I’ve known about Harry and David pears and decided to try them out with the husband when we spotted them at our Trader Joe’s. I’m not sure if I’m missing something, but they tasted like a good ol’ fashioned pear?! Nothing spectacular…

IMG-20191211-WA0001

We had some Thai food-soup and pad thai for the win. It was a cold day and this was some Thai comfort food at it’s best.

IMG-20191208-WA0014

To say I had a lot of turkey sandwiches would be an understatement. For whatever reason sandwiches and chips were just really hitting the spot at the time and why stop when you have a good thing going?

We recently discovered Mr. Dumpling and have been back a couple more times (that’s how good it is!). We got the fish and celery dumplings as well as the beef and green onion. We got the spicy beef soup which was fantastic as always…this sounds pretty delectable right now.

IMG-20191215-WA0008

Last but not least we have the bagel sandwiches from 42nd Street Bagel Cafe. Keep the sandwiches and chips coming! We got an everything bagel with egg and cheese as well as their pastrami sandwich on an everything. I loved both, but the pastrami sandwich won out by a tinyyy bit here. Honestly, their bagels by themselves are so yummy! I am so happy to have found this bagel place!

IMG-20191215-WA0014

That wraps up this post! Have you guys been having any cravings? Any new food finds? Let me know in the comments below!

Oh the food we will eat…Combine Kitchen

Since moving I’ve been on the hunt for a brunch spot-on Yelp this place has 4.5 stars and 1085 reviews so I had to check it out.

20191108_101349

We arrived after a workout ready to eat! We ordered two savory items to share-one being the steak and egg toast and the other being the lox toast.

We tried the lox toast first which came with house cured salmon, dill cream cheese, watermelon radish, pickled red onions and candied mustard seeds served on a slice of toasted bread. I loved everything about this toast-the silkiness of the salmon, the perfect amount of cream cheese, the bite from the radish and pickled onions and the sweetness from the candied mustard seeds. It was so good!

20191108_101326

Next up was the steak and eggs which arrived with skirt steak, poached egg, topped with salsa verde on a hefty piece of garlic toast. This had a side of arugula with lemon vinaigrette which we also added to the toast to add some texture and brightness. This toast was the hardier of the two and the more savory.  It was just meaty and had some creaminess from the egg and brightness from the salsa verde, but adding the arugula helped add a freshness that it needed.

20191108_101330

I won’t lie I did add sriracha to both of these because I love some spice and I loved it that much more!

I will be back to have more food because I really, really enjoyed this place and the eats!

Cookies and Closings

The week of October 13th was an exciting one to say the least! It was a busy and odd week that kinda ran together and felt super long at the same time. To sum it up there were cookies and we (finally!) closed on selling our house!!

We tried a new make your own pizza place on Wednesday called Pizza Press. It was delicious, but I would pick Blaze any day of the week!

On Thursday came some cookies we ordered! We had to try out some of Bang Cookies new flavors (and some oldies, but goodies). We waited till the weekend to try them, but they were delicious none the less. We wanted to try all the flavors so we only ate half each and froze the other half.

Thursday is also the day we got the text confirming that we had finished the process of selling our house! It was a very bittersweet moment. We obviously had loved our little home in the Valley and put a lot of effort into making it go from house to home, but we were very happy and relieved to have finished the selling process.

This was the first home we bought together and boy did we learn so much! It was quite the journey ❤️

I was also working Thursday and Friday so it was a bit of a blur!

Our weekend was kicked off on Saturday with a workout and breakfast at Denny’s. We both ordered the same veggie sizzlin’ skillets. and shared half of a pumpkin crackle cookie.

20191019_105126

We walked around and enjoyed the gorgeous weather and walked into a Barnes and Noble. I headed into my favorite section which happened to have some really interesting and funny finds.

20191019_112309

I also noted this book that I want to buy at some point!

20191019_113108

We also did some grocery shopping so our Sunday selves would thank us 🙂

20191019_121729

After dropping off groceries and dropping in some laundry we headed out for a nice walk and some caffeine.

20191019_140813

When we came back we went to TJ Maxx and got this gorgeous, fluffy blanket from TJ Maxx and some fun wrapping paper from Target!

20191019_192319

By the time we came back we were in much need of a snack so I had some TJ’s Harvest Chili and sourdough toast. We may or may not have had half of this cinnamon whiskey crackle…by “we may” I mean we definitely did.

20191019_125352

I finished up laundry while hubs wrapped up a present and we enjoyed some In n’ Out and more cookies for dinner!

20191019_125321

I don’t know about you, but that is a pretty productive week for us! I hope you guys are having a great start to your weeks and I would love to know what you’ve been up to-let’s talk in the comments!

A couple of week of eats

These eats are from the past couple of weeks or so when my schedule was a bit odd and I was on one day/off the next/on again at work and then I was in reset mode. We had a good combination of eating in and out. Mind you, this is not all the food I ate, but it is all the food I took pictures of 🙂

After Yard House I was craving lettuce wraps and so lettuce wraps I made! These were so good and satisfying!!

20191008_174132

We ended up trying a new Mediterranean spot called Zait Bistro and got some wraps. I really enjoyed these wraps and found them to be flavorful and filling. We ate some leftover peppers, carrots, and tomatoes with this to amp up the micronutrients!

20191011_171217

I’ve been enjoying the Benevolent Bacon and have been making quite few BLTA’s. If you’re looking for some added heartiness and crunch in your sandwich…would recommend! Also, those pink things are pickled turnips and boy are they so good…they add such a good zing to anything.

20191009_120927

After moving to San Bernardino and having a Blaze so close by I’ve reconnected with my love for it. Their crust is so good and it’s so fun to personalize your own pizza. They have so many spots that do this now, but Blaze is still my favorite!

I still love these Denny’s sizzling skillets-this one is the egg white version, but I opted for the whole scrambled egg. It’s filled with broccoli, mushrooms, tomatoes, potatoes, and spinach. Give some Cholula to throw on top and I am one happy gal 🙂

20191013_102017

We are still (trying) going strong with having salmon once a week and this dish was fantastic! I cut up some Brussels and pan sauteed them, roasted up some carrots and called it a meal! It was so warm and satisfying.

20191015_174117

Speaking of Brussels, (I don’t know why, but I crave Brussels once the cold weather hits) I took some toasted sourdough, slathered on some vegan pesto, sauteed some Brussels and scramble an egg for this delicious looking toast! It really hit the spot especially after the addition of chili flakes 😀

20191015_125637

Those are my eats from a couple of weeks, but I’m curious what’s on your menu?
