What we’ve been eating…

We have been eating our colors and more whole foods…at least during the week 😁

I wanted to share with you some of our yummy weekday meals starting with this lunch. We used the sweet kale salad kit and baked up some frozen air fryer chicken tenders.

These tenders were from Tyson and they were crispy and delicious. I have to add though that you need some kind of sauce to dip it in because they do run on the dryer side.

I mentioned in my last post the breakfast tacos I have been making with the Siete tortillas.

I roasted up some potatoes for the week to create a quick and delicious breakfast.

The addition of some yummy pickled veggies amped up the flavor!

Watermelon has been a go to snack recently. We get one good watermelon and we are on a roll with finding all the sweet, juicy ones.

For dinner one night we made a stir fry with yuba noodles. Yuba noodles are made from tofu and add a chewy texture and a bit of protein.

We did a combo of shrimp, broccoli, onion and mushroom. It was tasty and filling!

The protein pancakes from Kodiak Cakes and cherries have been another go to breakfast. I love cherries and am so happy it’s cherry season 🙂

These are our eats as of late! What have you been munching on??

Some fun eats

Hi friends!

I feel like it’s been a minute since I shared about any food that we have eaten out.

I wanted to come on here and chat with you guys about some fun food we have had.

With the season change we have had a lot of different fruit at the house. We love our fruit! Mangoes and grapes have been so good recently!

Our love for pizza still runs strong so some Blaze had to be included in the mix. That veggie pie was spicy-between the jalapenos and the chili flakes we always add. I’m getting heartburn thinking about it, but boy was it worth it.

The pb cups were an impulse grab when we made a Sprout’s run. These were not peanut buttery enough but hubby enjoyed them!

We discovered a new Mediterranean spot-Luna. They have such yummy wraps! Their fries are pretty great too. They are thin and crispy, but still soft on the inside!

Baked was closed for a while and has now reopened only on weekends and for a few hours. We had to support one of our favorite local businesses and picked up some cupcakes!

Our Chick-fil-a had been closed for reconstruction. We were so happy to see them open back up and we headed into the drive through for our usual. We had 2 spicy chicken sammies with extra pickles, small fry, and some grilled nugs on the side.

It’s been a little while since we had an actual cheesecake from Cheesecake Factory so we decided to try the Reese’s. It was very good, but I do wish it had chunks of Reese’s cups in it. At some point I would like to try the Adam’s pb cheesecake.

Have you guys had any fun eats? How are you all holding up? Let’s talk in the comments!

Tempeh everyday

My usual meals at home are vegetarian, but we’ve been trying our hand at making some new things and that has meant eating a little more meat.

I wanted to change that up so picked up some tempeh to try out.

I (wrongly) assumed that it would be like cooking up tofu. It was a little more prep then that.

You have to boil or steam the tempeh to rid it of a sour/bitter taste, marinade it, and then bake or cook it stove top.

My favorite thing to do has been to make sandwiches or BLT toast. Hubby has loved making wraps with them!

I picked up a carton of heirloom tomatoes to use for our BLTs. The tomatoes were so yummy. I cut it up and had the rest it on the side-they were so juicy!

Tempeh does take a little extra time to prep, but now is a good time to experiment with ingredients.

Have you cooked tempeh? What did you think? How do you make it? Let’s chat in the comments!

Stay healthy and I will be back next week!

Loco Moco

Hi friends!

I’m sorry there was no post on Monday, but I am back today! I may be sticking with one post a week for the next little while, but we shall see.

I wanted to share with you this loco moco bowl we made. When we lived in the Valley we frequented Oi Asian Fusion and would always get their loco burger bowl.

I have no idea why we never thought about cooking this dish up, but it was super simple.

This tasty bowl of comfort includes rice, a burger patty, sunny side egg and gravy.

We cooked up rice and a burger patty and used the McCormick packets to make our gravy. Hubby fried the perfect sunny side egg to top our bowls!

I chopped up seaweed sheets to add on top. It adds a good punch of flavor!

This would be a great dish for a busy day when you have little time but want something hearty and filling.

Let me know if you have ever made this dish or tried it and what you think.

I’ll see you guys next week!

The time we cooked

Hi friends! Since this is a food blog and the show must go on I have a food post for you today.

We have been trying to cook at home more for a few reasons. For one, social distancing, two, dine in is closed and three, it’s entertainment and we gotta eat!

That list obviously doesn’t include things like the food is more nutrient dense and being able to get as many colorful fruits and veggies for our immune health but that’s a given, yeah?

I wanted to share three things we have made recently. One of those things was the “fried rice” dish I shared a couple of posts ago.

We put so many veggies in here-broccoli, kale, bell peppers, and mushrooms. It was a yummy dish!

One day for lunch we baked up chicken legs. I learned a fun tip from Bon Appetit. If you salt the legs the night before, you will get some juicy and flavorful chicken.

Juicy and flavorful they were. We seasoned 2 with Sazon, 2 with our combo of seasoning and 1 with the TJs elote seasoning.

IMG-20200405-WA0004

The elote and our combo was out favorite! Our combo was super simple-garlic and onion powder and some dry dill.

Because we seasoned with salt the night before it didn’t need additional salt. Gosh was it yummy!

If you have been reading long enough, you guys know how much we love burgers so that was on the dinner menu.

IMG-20200405-WA0001

We made some fries from scratch and even though some were burnt, we really enjoyed them. These are great when you have some extra time to soak and dry the potatoes. I loved that they were baked and still turned out super crispy!

IMG-20200405-WA0003

Did you guys know the chicken trick? Have you made fries from scratch? Are you trying out new recipes with this newfound time? Let me know!

Thanks for reading friends! I am going to try to keep up with my Monday and Thursday schedule, but I may miss a post here or there depending on how the week is going.

Until next time stay safe and healthy friends!

A couple of week of eats

These eats are from the past couple of weeks or so when my schedule was a bit odd and I was on one day/off the next/on again at work and then I was in reset mode. We had a good combination of eating in and out. Mind you, this is not all the food I ate, but it is all the food I took pictures of 🙂

After Yard House I was craving lettuce wraps and so lettuce wraps I made! These were so good and satisfying!!

20191008_174132

We ended up trying a new Mediterranean spot called Zait Bistro and got some wraps. I really enjoyed these wraps and found them to be flavorful and filling. We ate some leftover peppers, carrots, and tomatoes with this to amp up the micronutrients!

20191011_171217

I’ve been enjoying the Benevolent Bacon and have been making quite few BLTA’s. If you’re looking for some added heartiness and crunch in your sandwich…would recommend! Also, those pink things are pickled turnips and boy are they so good…they add such a good zing to anything.

20191009_120927

After moving to San Bernardino and having a Blaze so close by I’ve reconnected with my love for it. Their crust is so good and it’s so fun to personalize your own pizza. They have so many spots that do this now, but Blaze is still my favorite!

I still love these Denny’s sizzling skillets-this one is the egg white version, but I opted for the whole scrambled egg. It’s filled with broccoli, mushrooms, tomatoes, potatoes, and spinach. Give some Cholula to throw on top and I am one happy gal 🙂

20191013_102017

We are still (trying) going strong with having salmon once a week and this dish was fantastic! I cut up some Brussels and pan sauteed them, roasted up some carrots and called it a meal! It was so warm and satisfying.

20191015_174117

Speaking of Brussels, (I don’t know why, but I crave Brussels once the cold weather hits) I took some toasted sourdough, slathered on some vegan pesto, sauteed some Brussels and scramble an egg for this delicious looking toast! It really hit the spot especially after the addition of chili flakes 😀

Those are my eats from a couple of weeks, but I’m curious what’s on your menu?

Potatoes Many Ways

Many ways might be a bit of a stretch, but I was on Pinterest and daydreaming about different lunch options and it hit me that a baked potato is the perfect vessel for ANYTHING. It’s also filling, counts as a starchy vegetable, and tastes delicious!

Before I jump into my potatoes I did learn that with a savory potato it is most important to oil and season the outside of your potato before throwing it in the oven. This creates that incredibly crispy skin. When you’re ready to open it up and dive in-salt and pepper go a LONG way in preventing a bland potato. Now that we got the technical stuff outta the way let’s jump into the “many” potatoes…

I started off pretty basic with a cheesy baked potato. I could only manage half the potato with each of these meals, but this meal was so simple even though I was full I didn’t feel very satisfied.

20190905_184005

The next time I got a little more creative with my potato. I got some beefless grounds, mini sweet peppers, and cheese and this potato was pretty spectacular. I loved that the beefless grounds got a little crispy, the peppers were a little charred and the cheese added some nice gooeyness. This was much more satisfying!

20190906_181131

I also enjoyed this version with some broccoli and cheese for extra veggie goodness and fiber. Even though the broccoli was just basic steamed broccoli I think the different texture goes a long way into breaking up the monotony.

20190906_132048

Out of all the potatoes though my absolute FAVORITE was this breakfast sweet potato. I baked it ahead of time and when it was time to prep it I would just throw it in the microwave for a bit, smash it up with cinnamon, microwave it some more and then shmear the heck out of it with PB.

20190913_091418

Hubby had talked about sweet potatoes and peanut butter and it always seemed like an incredibly delicious combo, but I never got around to it. After workouts I am ravenous so waiting an hour for a potato to bake was a no go. Having it prepped really helped and made it into a super fast, nutritious, and tasty meal!

Fried potatoes (as much as I enjoy them) don’t always leave me feeling my best, but I really loved having this root vegetable be the base for my dinner. I would love to know how you like to make your potato? What are your favorite toppings/mix-ins?

Thanks for reading! See you loves on Thursday!

What I eat in a day

I’m pretty proud of myself for actually managing to take pictures of a whole days worth of eats so let’s jump in and see what tastiness awaits!

Breakfast was so yummy with avocado sourdough toast topped with tomatoes and a very soft boiled egg. I did not want my egg this soft, but that’s what happens when you are learning how to use an electric stove. Our current apartment has an electric stove/oven and it’s definitely taking some getting used to…

20190708_105700

I munched on some watermelon after this because it’s hydration and dessert 🙂

20190708_110511

Lunch included this bean and cheese quesadilla with some steamed broccoli and lots of hot sauce that wasn’t pictured.

20190708_140151

Watermelon again because well, it’s summer people!

20190708_110503

Dinner included another piece of avocado toast and some left over Pad Thai from a couple of days ago. I don’t mind having a hodgepodge of delicious things for dinner even if they make no sense!

20190708_191951

Dessert included a few very sweet strawberries! I just cannot get enough of this summer fruit!!

20190709_105944

What have you been eating lately? Are you as obsessed with summer fruit as I am?

Meals and Things

I thought it would be good to share some random meals I’ve taken pictures of in the last couple of weeks!

I think you guys saw this on my Sardinely Delicious post, but I really enjoyed this mish-mosh of sardines, kale, tomatoes, and crackers!

20190315_115819

Keeping up with the fish theme I am back into lox and avocado toast-I’ve been loving it with a few slices of tomato stacked between the lox and avocado. It’s just so satisfying and delicious!

This gorgeous dinner was at Joey one late Saturday Night. We had the Korean Cauliflower, Lobster Ravioli, and Molten Chocolate Cake. It was an excellent meal!

We are loving sandwiches in this household (not anything new). This particular one was made by us for dinner one night-slices of beef, white cheddar, and a mixture of horseradish and mayo all sandwiched between two slices of sourdough.

20190315_195908

This one was from the mall food court and featured turkey, chipotle mayo, tomato, avocado, and other goodness! The panini press crunch is everything!

20190316_171135

We shared this hazelnut chocolate from Godiva after the panini as our dessert…we always need dessert.

20190316_172350

We tried out a new bakery and got a few things to try! The almond cake was a bit dry, the nutella cheesecake was good, and the fruit topped parfait/cake item was delicious 🙂

Burgers with tomato, peppers, and white cheddar.

20190317_185842

For our burger side we roasted some potatoes and Brussels. I don’t have a post roasting pic, but this was too pretty to not snap one!

What have you guys been eating lately?

Full Day of Eating on a Friday

By the end of the week our fridge is usually running low on produce so if I’m at home I’m usually eating the last bits and pieces of our fruit and veg. This particular Friday I didn’t realize we had no kale so I decided I would just have some tomatoes with my morning toast 🙂

20190222_100442

I did have breakfast dessert in the form of a mandarin, but that obviously went unpictured…shmurp.

Lunch was half of the last piece of naan bread topped with some sardine “salad” I threw together. I heated up some frozen broccoli since I was craving something green and tomatoes because I needed to use them up. Not very appetizing looking, but it was really delicious and nutritious 😉

20190222_124004

Again mandarins were had, but nowhere to be found in my phone. Quite the mystery…

We had planned our dinner for Friday night, but had not done any of the shopping for it so once the hubby got home we did some grocery shopping to have our burger night.

We found these delicious challah rolls from Whole Foods. They were crusty on the outside and so so so soft on the inside. I was in bread heaven!

We made a stop at Sprouts to get some ingredients for this Green Goddess dip I had seen on Queer Eye on Netflix plus ground beef and other essentials.

We created an amazing side of roasted cauliflower that we dipped in the delicious Green Goddess dip we made. I highly suggest making the dip! It’s so yummy and herby and noms!

We obv also had these amazing burgers in the most incredible buns. A co-worker had gifted (kinda forced) some white cheddar on me and so we used that to top our burger. We both felt like we had found our best burger situation…the bun, the cheese, the meat, seasoning-it was all perfection!

20190222_195034

Another thing we picked up at Sprout’s were these mochi ice-cream that we saw. They were new and the flavors were intriguing so we obviously had to try a few! I think I prefer the fruit flavored mochi ice-cream over these, but they were still tasty!
